Rapture Port Demi-Glaze Sauce

Perfect for drizzling over grilled meat, vegetables, burgers, or poutine.


About 1/2 Cup


4-cups of “beef stock”
4-cups of “vegetable stock” sodium free
1/2 cups of Rapture Port red wine
2 tablespoons butter (optional)
1 tablespoon rosemary, chopped, (optional_


In a large saucepan, over medium high heat, add beef and vegetable stock.

Reduce by 80-85%. Approximate yield 1-1/2 cups of demi-glaze.

Remove reduced stock from pan into small glass bowl.

Add the 1/2 cup of Rapture port red wine and 1/2 cup of stock (from the bowl) and reduce by half stirring to prevent scorching the sauce. Once reduced remove from heat.

For a more velvety texture, gently stir in 2-tablespoons of butter to the sauce. If using, add the chopped rosemary.


You will be left with approximately 1-cup of Demi-glaze that you can use for future sauces or if needed for larger parties. Simply add 1/2-cup of Rapture port red wine to every 1/2 cup of stock and reduce by half.
