2016 Testament Bordeaux Blend

Our top-of-the-line Bordeaux blend offers glorious aromas of fresh cut roses, blueberry, cassis, and blackberries. A silky creamy entry gives way to layers of complexity that unfold in the mid-palate with velvety tannins enrobing a center of concentrated black-fruit. Elegantly balanced, the acidity and core structure deliver an exhilarating finish with hints of dark chocolate. 

 

WINEMAKING

Picked in mid to late September - depending on the varietal, the grapes were fermented separately into 5-ton open top fermenters and pumped over multiple times per day to achieve maximum extraction, which was necessary to match the ripe flavors of the 2016 vintage. Ready to drink. Optimal now - 2029.
