2016 Soul Shaker Cab / Syrah

After two years in the bottle, this wine is finally coming into its own, offering its usual seductive aromas of ripe currants, black cherries, pomegranate, cranberry, chocolate, exotic spices, herbs, toasted hazelnut, and hints of roasted coffee. The fruit is delivered by medium acidity and firm tannins, which explode on your palate leaving you with a mouthful of dark, intense fruit. Picked in late September, the Cabernet Sauvignon, Syrah, Merlot and Petit Verdot were fermented separately in 5-ton open-top fermenters and pumped over multiple times per day to achieve maximum extraction. Aged for 24 months in 50% new French Oak with a variety of toasts from light to medium.
